Cupcakes…It’s What’s for Dinner!

Well, that’s misleading. As much as I’d love that to be true, what we really made are called Cheeseburger “Cupcakes” and they are SO GOOD! I’ve been trying to get back on the Weight Watchers wagon, but I’m trying to do it without spending the money to do it “officially” or go to meetings (cut to a month from now when I’ll be posting about going to my first WW meeting and how I’ve bought every WW cookbook and gadget available). So I’ve been finding some really great blogs from some really great people who share their lightened versions of meals and posting the WW points. Thank God there is someone to do that leg work for me! One of those ladies is Emily from Emily Bites. I really love her website. It’s super easy to navigate, and I don’t think there is recipe on her index that I don’t want to try. Plus, she’s a Buffalo gal like myself (well, Buffalo is the nearest city to Westfield anyone ever knows), so you gotta love that. So the other night, my bf (affectionately called Vitamin D to protect his identity) and I made these:

They look great, right? And mine even turned out to look just like the picture! That never happens, really. And they were easy to make, due in large part to Vitamin D’s sous chef abilities. He’s a great chopper, and will even battle the big bad onion for me (I’m a major crier when I chop onions). These were 4 P+ (according to her calculations) for one of these. But they are filling and after a couple few of these, there wasn’t much room left in the old food barrel for anything else. What I really love about her recipes are how easy they are to adapt and modify. Next time, Vitamin D wants to try BBQ sauce instead of the ketchup and mustard, and we might try another cheese. Fortunately, she has several other recipes to make with wonton wrappers and adds more all the time, because they come in a package of 1000 or something. We have a lot left, but that just means I get to make some more of her delicious recipes and explore some new ways to use wontons! I’m open to (easy) suggestions! Do you have creative uses for wontons I should know about?
